We've been dipping into the archives again here at Pig&Vine headquarters. Last week is it was the 2006 López de Heredia Crianza Rioja, which demonstrated how a nearly 10 year old, well-structured red can evolve. Today, the Schloss Wallhausen Riesling Kabinett 2006 from Nahe, Germany, shows us what an age-worthy white of the same vintage can do.

Golden in color with a succulent, round palate, hints of petrol and a nuttiness. There's still some fruit on the palate with sharp acidity, both rich and refreshing. It's a Kabinett, which means it was picked at the lowest sugar level allowed for Prädikat (classified) wines. That doesn't necessarily translate to dry wine. Kabinetts can be bone dry or off-dry and this one is the latter. I sipped it without food and reveled in its luxuriousness, but I would love this with some stinky cheese or medium-spiced Asian or Indian cuisine.
